A word from the chef

Ask any sushi chef what makes good nigiri and you'll hear about fresh fish, steady hands, rice that hasn't gone cold. Mine used to sound the same. Then I looked at the belt and realized the real answer was simpler.

Freshness just means showing up as yourself, plate after plate, no substitutions. So that's what I serve: eight pieces of me arranged in a circle, because consistency matters and I happen to have plenty of myself going around.

New guests flinch when piece nine comes around. I don't mind. A good chef tastes his own cooking, and technically, I'm always tasting.

What exactly is the ninth piece?

A limited seasonal item, officially. Unofficially, it's the chef taking a short break from being the other eight.

Does it hurt him?

He has never once looked upset about it, which the staff find more unsettling than reassuring.

Can I order the ninth piece directly?

No. It appears on the belt when it wants to, not when you ask the waiter.

Where does the tentacle supply come from?

Ask the chef. He points at himself and grins wider. That is the whole answer, every time.

Has a health inspector actually visited?

Yes. She's a regular now. The report has been "coming Monday" for several months.

Does the belt ever stop?

Not during business hours. Come back after close if you want to find out what happens then.

The belt has been running since before anyone started counting. Every plate that comes back is topped exactly the same way, because there is really only one ingredient here and he never runs low on himself. Eat as many as you like. He will keep grinning from wherever he ends up next.
